Since our little one started daycare last week, B and I find ourselves scrambling to get laundry done and bottles washed on weeknights, leaving us very little time to make dinner. Now more than ever, it’s important for us to make balanced meals on Sunday that provide us with enough leftovers for at least a few more dinners during the week. Here are some of our favorite recipes we come back to again and again for delicious leftovers!
Pork Pot Roast with Root Vegetables
Penne with Brussels Sprouts, Chile and Pancetta
Pumpkin Soup with Honey, Sage, and Pancetta

I like the fact that most of your recipes involve wine in the sauces 😉

Can you believe I have never had or made Shepherd's Pie?! It always looks so good. I am totally a fan of making one meal that can last several days. I often make enough to freeze if possible too. Anytime I make meat in the crock pot, I make extra.
