Sunday Dinner: Spanish Chicken and Green Beans

This very easy chicken recipe has quickly become one of our regular favorites.  The sauce goes quite well with simply steamed green beans, making it a perfect “one pot” meal.

  4 small boneless chicken breasts or 8 boneless chicken thighs
  1 large yellow onion, finely chopped
  8 cloves garlic, finely chopped
  4 oz brandy
  olive oil
  8 thin slices Serrano ham, cut into small pieces
  1 14.5 oz can diced tomatoes
  salt to taste

Heat a few tablespoons of oil into a large heavy bottom frying pan to medium-high. Add chicken and ham and brown chicken on both sides (approximately 5-8 minutes). Add onions, chopped garlic, tomatoes and brandy to chicken, stirring to mix. Cook uncovered on medium-low until onions become transparent. Reduce heat to medium-low. Cover and cook for about 10-15 minutes or until chicken is done.

Serve with steamed green beans smothered in sauce and roasted baby potatoes and enjoy!

Delicious! I love how colorful your plates are–now that I'm living at home I actually have time to prepare vegetables in ways other than heating them in the microwave between classes, haha!
