Sunday Dinner: Shrimp Tacos

A friend of mine made shrimp tacos a few weeks ago and I’ve been craving them ever since, so I decided to give them a try myself. Surprisingly easy, delicious, and healthy. I think this meal is going to be on regular rotation this summer.

For the shrimp…
  1 lb raw small to medium shrimp, peeled, de-veined and tail removed
  1 tablespoon red chile powder
  1 tablespoon garlic powder
  1/4 teaspoon cumin
  1/2 lime, juiced
  olive oil
  salt and pepper

For the guacamole…
  2 ripe avocados
  1/2 red onion, chopped
  1-2 jalapenos, seeded and chopped (depending on desired heat level)
  2 cloves of garlic, finely chopped
  1/2 lime, juiced
  1 handful cilantro, chopped
  salt to taste

…and the rest.
  corn tortillas (heat, covered and wrapped in two damp paper towels, for about 30 seconds in the microwave until warm and soft)
  chopped red onion
  cooked corn kernels, chilled
  shredded cabbage
  lime wedges
  queso fresco, crumbled (you can find it in specialty stores)
  chopped cilantro

Heat grill to medium-high.

In a bowl, coat shrimp with olive oil and seasonings. Let stand at room temperature for 10 minutes.

While shrimp is standing, make the guacamole by mashing avocado with a fork and then mixing in the remaining ingredients. Leave one of the avocado pits in to keep guacamole from browning too quickly and cover until ready to serve.

Place shrimp in grill basket or soaked skewers and cook, turning at least once, until curled, pink, and firm to the touch.

Serve with guacamole and additional accoutrements listed above!

They look yummy. i make similar cod/flounder fish tacos for the family quite often. A big hit with the kids.
